Dropped $22 on a silicone baking mat and it saved my cookies but ruined my pizza nights
I grabbed a silicone baking mat at a kitchen store in Boise about 3 months ago because my parchment paper kept curling up on me. It cost $22 which felt steep for a flat piece of rubber, but I was tired of buying rolls every couple weeks. First batch of chocolate chip cookies came off it perfect, no sticking, no burned bottoms, and I didn't even need to grease the pan. But then I tried making a frozen pizza on it last week and the crust came out soggy and pale, like it never got any direct heat. The mat blocks the pan from doing its job. So now I have two trays, one with the mat for cookies and one bare for anything that needs a crisp bottom. It works but it's a pain keeping them straight, and I already grabbed the wrong one twice. Is there a mat out there that lets heat through better, or am I just stuck swapping trays forever?
