Baked my 100th loaf of sourdough and it finally had ears
I started baking sourdough in January with a starter I named Doughthy. I kept a little notebook and hit exactly 100 loaves yesterday. Number 100 came out with really nice ears and a crackly crust that sounded amazing when I tapped it. It took me like 30 failed loaves before I figured out my kitchen was too cold for proofing. Has anyone else tracked their bake count and seen a big jump in quality after a certain number?

Respect the hustle but countin' loaves feels like overthinking it. I've been baking sourdough for years without tracking and my best loaves just came from random tweaks, not a magic number.
