Warning: my local mill switched their 'all-purpose' flour blend last month

I didn't notice until three wedding cake orders in a row had weirdly dense crumb, all traced back to a single 50lb bag from their new supplier. Anyone else get burned by a silent formula change?

Wasn't there a whole thing about King Arthur flour doing something similar a while back? Silent changes are the worst.

Silent changes mess with the muscle memory of baking, which is half science and half habit. You reach for a familiar bag and your usual recipe just doesn't work the same way. It feels like a small betrayal from a brand you trusted.
