Visited a trendy bakery downtown and watched them use stale croissants for their bread pudding

I stopped into this new spot called Flour & Flame last Tuesday because a friend raved about their bread pudding. While I waited I noticed the baker pulling day old croissants from a bin behind the counter and that's fine for budget but their sign said they made everything fresh daily. They charge $9 a slice for that pudding which felt like a rip off honestly. Meanwhile my local bakery sells their day olds for half price and the quality is way better. Am I wrong to be annoyed by this kind of marketing or is that just how the game works now?

Read an article saying a third of fancy bakeries do this with day-old goods.
