Rant: Why I now knead dough without gadgets
I used to think my stand mixer was the only way to make bread. It seemed quick and kept my hands clean. But I saw a film from the 70s of bakers mixing everything by hand. I gave it a go last weekend with a simple white loaf. Feeling the dough come together under my fingers was so calming. My bread has a nicer crumb and chewier crust now. It makes me appreciate how bakers did it for generations before machines.
