Parchment paper vs greasing the pan, which hill are you dying on?

I watched a 3 minute video from a bakery in Portland where she refused to grease anything and claimed parchment is non negotiable for even layers. But my grandma's sourdough recipe relies on a butter bomb and never sticks, so I'm torn after testing both on 4 batches of focaccia last week. Anyone else have a side they're ready to defend with burnt fingers?
