My sourdough crust went from sad to perfect after one tweak
For 6 months I kept getting dense, pale loaves no matter what I did. Then I started putting a cast iron pan in the oven during preheat and adding ice cubes right after loading. Has anyone else had a simple oven trick fix their crust issues?

Ice cube method is solid. Heavy steam changes everything.

First time I tried it with a dark roast from a local roaster in Portland. Took the ice cubes from the same beans brewed strong the day before. The steam definitely changes the extraction. @anna_green48 nailed it with that breakdown of how heavy steam opens up the grounds differently. Ice cube keeps it from getting watered down too.
