Hit 500 sourdough loaves baked yesterday and now I actually like the tang

I always hated that sharp sourdough taste, figured I just wasn't a fan. But after baking that 500th loaf with a 12 hour cold ferment, the flavor finally clicked for me. Has anyone else had a number like that change their mind on something?

Totally agree, had the exact same turnaround with dark chocolate after forcing myself to eat it for years.

Is it really that deep though? I mean, dark chocolate's an acquired taste for sure, but forcing yourself to eat it for years? That feels like a lot of work for something that's supposed to be snack. @matthewross, you had to straight up train your taste buds like a dog? I tried the same thing with coffee once, gave up after a week because why suffer? If I don't like something, I just don't eat it. Life's too short to choke down expensive chocolate you hate. But hey, if you finally got there, good for you. I guess.
