Gotta wonder if the citrus was throwing off the pH so bad it killed off some of the helpful bacteria and mites. Those peels are acidic and worms hate them, so maybe the bin got too sour for the good microbes to do their job. Once you cut the citrus, the whole system probably balanced out and the worms could actually eat without getting stressed. Bet the castings you're getting now are way richer than before too.

Is it really that big a deal though? I've tossed citrus peels in my bins for years and never saw a crash like that. Maybe they just overloaded it with too much at once, like a whole bag of grapefruit in one go. pH swings from a few peels seem pretty minor when you've got enough bedding to buffer it.
