Watched a food truck guy in Nashville drop fries straight in the basket with no oil at all
Stood in line at a spot off Nolensville Pike and the cook was pulling crispy fries out of a basket with zero oil in it, just a shake of seasoning and a few minutes on 400. I went home and started doing wings and chickpeas the same way, and they come out better than when I used to pour half a cup over everything. Has anyone else just quit oil entirely, or do you still toss a little on stuff like broccoli?
Wait, so the basket itself had no oil at all? That part is frying me up. Because fries need some kind of fat to get crisp, unless he was using an air fryer basket or maybe a convection oven setup. I keep hearing people say they just spray a tiny bit of avocado oil on broccoli before roasting, but you're saying you skip even that step? What's the texture like on the chickpeas, do they actually crunch or just dry out? I tried wings with no oil once and the skin stuck to the rack like glue.
