That time I burned wings 3 times in one week

Last Tuesday I tried making buffalo wings in my air fryer and they came out black on the outside, raw in the middle. Took me 3 batches to figure out I needed to pat the skin dry first and cook them at 380 instead of 400. Has anyone else had to relearn basic steps after thinking you had it down?

Oh man have you tried drying them in the fridge overnight instead of just patting them? That was a game changer for me after I ruined like 4 bags of wings in one weekend. I lay them out on a baking sheet with paper towels on the bottom, flip them after a few hours, then leave them uncovered in the fridge for like 6-8 hours. Gets the skin super crispy even at lower temps like 375. Also I found out the hard way that if you crowd the air fryer basket too much the steam gets trapped and nothing browns right. Just leave some space between each wing and rotate them halfway through. Now I can make a perfect batch every time without burning anything.

Four BAGS of wings? Dude that's a whole chicken farm's worth of sad, soggy skin right there. Glad you figured it out before going broke on poultry.
