I finally had to pick between frozen fries and fresh potatoes for my air fryer
My grocery store in Bellingham was out of the 32 oz bag of crinkle cuts I always get, so I grabbed a couple russets instead. Tried making my own wedges, but they came out soggy in the middle even after 20 minutes at 400. Anyone got a solid method for fresh potato fries that actually crisp up?

Honestly I saw a tip about boiling them for a few minutes first. It cooks the inside so the air fryer just has to crisp the outside. Tbh I tried it and my wedges were way less soggy.

Soak those cut potatoes in cold water for at least 30 minutes, it pulls out the starch. Dry them completely with a towel before you even think about oil. Toss them in a tiny bit of cornstarch with your oil and salt, it makes a huge difference. Crank the air fryer to 380 and don't crowd the basket, they need space to get crispy.
