I accidentally made 12 batches of roasted chickpeas in one day

I went through a whole 4-pound bag of chickpeas trying to get that perfect crunch at 375 degrees, and now my kitchen smells like a Mediterranean restaurant. Has anyone else found the magic number for air fryer time on chickpeas or am I overthinking this?

Try soaking your chickpeas in salted water for 4 hours BEFORE cooking. I've been making these for years and nobody talks about this step. That whole "pat them dry" thing is useless if you skip the brine. The salt actually breaks down the skins and lets moisture escape way better during roasting. Your 375 degrees is fine but bump it to 400 and check every 5 minutes after the 15 minute mark. Also STOP opening the air fryer every 2 minutes to check - you're just letting all the heat out.

400 degrees is actually a bit high for chickpeas in an air fryer. At that temp the outside will get dark before the inside dries out. 375 is fine, but try 370 with a 20 minute total cook time and shake the basket once at 10 minutes. Also the brine soak works, but the real trick is removing the skins after soaking. A clean dish towel works to rub them off in under a minute.
