Can we talk about chicken skin not crisping at 400?
I tried wings last night, followed a recipe to the T. 400 degrees for 18 minutes, flipped halfway. Skin came out rubbery and pale, total waste of a pack from Costco. The manual said preheat for 3 minutes but I skipped it, I bet that did it. Anyone else have this fail and then fix it with a simple change like patting dry or adding baking powder?
Ugh, that exact thing happened to me! Skipping the preheat gets me every time too, plus I learned the hard way that wet skin is the enemy. Patting them dry with paper towels until they’re almost sticky made a huge difference for me.
